The Kitchen & The Table

Chef mid-laugh in the Sprout kitchen, wearing a linen apron, heirloom tomatoes on the prep counter behind her

"The tomato is always the hero. Everything else is just the setting."

— Maya Okonkwo, Head Chef & Co-founder

Cooking at the
speed of seasons.

Maya grew up watching her grandmother char peppers directly over the gas burner in Lagos. That sensory memory — the pop of skin, the sweetness underneath — is baked into every plate at Sprout.

The menu rewrites itself every eight weeks. Not because it has to, but because the farm down the road sends us something we've never cooked with before, and that feels like an invitation.

"I keep a little notebook of meals I want to remember. Sprout's autumn dinner got three pages. I wrote about the lighting, the beet tart, the couple next to us who'd been coming for two years. It felt less like a restaurant and more like someone's home on the best night of the year."
